Although many distilleries once existed in Ireland, for various reasons there are now only three Irish whiskey distilleries left. These are:
Malt whiskies are made from barley that has been soaked in water and allowed to germinate, before being dried in a kiln, to make malted barley. Grain whiskies are made from unmalted maize or wheat and are produced mainly for blending with malt whiskies. Malt whiskies tend to be stronger in flavour than grain whiskies.
What is Unique About Irish Whiskey?
As with Scotch whiskies, Irish whiskies are left to mature in casks for a minimum of three years, and expert blending teams select the right combinations of different whiskies from different casks so each blend is consistent with previous batches.
As the name suggests, Irish whiskey is made in Ireland. The word whiskey comes from the Gaelic phrase ‘Uisce Beatha’, which means ‘water of life’. Whiskey is the Irish and U.S. spelling of whisky; the ‘e’ is omitted when referring to whiskies made in Scotland and other parts of the world.
Irish Whiskey and Scotch Whisky Similarities
Irish whiskies generally do not have the peaty, smoky flavour common to many of the Scottish Islay whiskies [link widoczny dla zalogowanych], because the malted barley is not dried over a peat fire. Again there are exceptions, such as Connemara Peated Single Malt Irish Whiskey.

Irish whiskey is usually distilled three times, giving it a lighter flavour than Scotch whisky, which is generally only distilled twice. However, there are exceptions to these rules; for example, Auchentoshan Single Malt Scotch Whisky is triple-distilled, whereas Michael Collins Single Malt Irish Whiskey is double-distilled.
Both Scotland and Ireland produce single malt, single grain and blended whiskies, but there is another type of whiskey that is only made in Ireland. This is known as ‘pure pot still’ whiskey, and is made from a mix of malted barley and unmalted [link widoczny dla zalogowanych], or ‘green’ barley, which gives the whiskey a smoother taste. Scotch whisky uses only malted barley.

Bushmills Distillery makes single malt Irish whiskies including 10, 16 and 21 year old malts, as well as Bushmills Original and Bushmills Black Bush, which are blended Irish whiskies. Bushmills uses un-peated malted barley in its whiskies so there is no peaty, smoky taste.Cooley Distillery - located in County Louth, North-eastern Ireland, and also operates from Old Kilbeggan Distillery in County Westmeath, Central Ireland. Cooley Distillery is Irish owned and produces a number of single malt whiskies, including Connemara, Locke, Michael Collins and Tyrconnell, as well as blended whiskies such as Inishowen, Kilbeggan and Millars. Cooley distillery also produces Greenore, an Irish single grain whiskey, as well as some supermarket brand-labelled Irish whiskies.New Midleton Distillery - located in County Cork, Southern Ireland. New Midleton Distillery is part of the Irish Distillers Group, which is owned by Pernod Ricard, and makes blended whiskies including Midleton Very Rare, Paddy, Powers, and Tullamore Dew, as well as Redbreast and Green Spot, which are pure pot still whiskies.
